Mora Estate Valporone 2013 - An intense, complex red wine made in the "Amarone" method. This amazingly different wine represents a passionate endeavor. Fabiano Ramaci is concentrating on the special, intense winemaking techniques of "Amarone". The classic varietals are used - Corvina Veronese, Rondinella, Molinara & Negrara. 3 different Sonoma County vineyards participated in this wonderful bottle of wine. After harvest, the grapes are treated with utmost care, being airdried for 120 days BEFORE fermentation. Extended skin contact during fermentation. This "appassimento" technique results in very concentrated flavors albeit much smaller amount of wine. Fabiano is the only producer in California of this style of wine. Truly an artistic passion. Right now, for the 2013, one MUST decant and let this wine breathe as there are layers of flavor and complexity waiting to be experienced.
